Atukula Upma (Flat Rice Upma)

Ingredients:
200 gm flat rice
50 gm Vanaspati
150 gm onion
2 gm mustard seeds
3 gm white urad dal
5 gm green chilli
2 gm Bengal gram
5 gm ginger
1 gm jeera
10 gm broken cashewnuts
3 gm curry leaves
3 gm coriander leaves
1 lemon
Salt to taste

Procedure:
Heat oil, add mustard seeds, urad dal, green chillies, Bengal gram and jeera. When it crackles, add chopped ginger, curry leaves and saute. Add soaked, strained flat rice, little water, cook for 2-5 minutes. Add a dash of lemon juice, salt to taste. Finally add fried broken cashewnuts and chopped coriander leaves. Serve hot with chutney.
